Chicken Cacciatore

Ingredients (price / serving):
1 chopped onion ($0.60)
1 cup of canned tomatoes ($0.88)
½ cup of tomato sauce ($0.17)
1/8 tsp. of garlic powder ($0.04)
1 tsp. of oregano ($0.74)
1/8 tsp. of pepper ($0.02)
4 pieces of chicken ($4.36)

Peel and chop the onion, and put into a saucepan. Add the tomatoes, tomato sauce, garlic powder, oregano, and pepper, and simmer on low heat for three minutes. Wash the chicken, remove the skin, and add to the saucepan. Cover and cook over low heat for about an hour until the chicken is tender.

Wallet hit: This low-fat recession recipe yields four servings, which comes to about $1.70 per serving. It’s also rich in nutrients and protein, so don’t be afraid to go for seconds.
